will connecting the seedbox to openvpn affect all of the income connections and outbounds or just for the torrent side of it? like i wouldnt want plex going through it.

The OpenVPN acts such as any other VPN that you use. This is for use on your local computer with a client such as OpenVPN. This will tunnel your local connection at home to the rest of the internet by using your Seedbox/Server’s IP.
